Leftovers stuffed potatoes!
(this usually works better if "yesterday's leftovers" are something like rice+meat)

0) Preheat your oven at 200°C for 15 minutes.
1) Peal and hollow your potatoes.
2) Season the inside of the potatoes (olive oil + salt + pepper + anything you want).
3) Fill those potatoes with delicious leftovers.
4) Bake them for 50 minutes (or until potatoes are tender, usually 45 min for me)
5) Be creative - enjoy.
